CUCUMBER ROLLS WITH THOIONADE

PREPARATION
- Wash the cucumber. If it's organic, you don't have to peel it.
- Using a sharp knife, cut about ten thin slices.
- Roll the strips so as to leave a hollow in the middle, and maintain the shape of the cucumber with a sprig of chives.
- Place the cucumbers upright on a plate.
- Place a teaspoon of toïonade in the center of each cucumber roll.
- Store in the refrigerator, and serve the rolls chilled.
