  • Preheat the oven to 200°
  • Unroll the puff pastry
  • Spread the arugula sauce over the entire surface of the dough.
  • Roll the dough (filling inside)
  • Cut 5mm wide sections. For convenience, you can place the rolled dough 10 minutes in the freezer before cutting the sections.
  • Lay the snails flat on a baking sheet. Don't worry if they're not quite round anymore, they'll spring back when cooked!
  • Put the pastries in the oven and cook for 10 to 15 minutes at 100°
